To complete this How-To you will need: 1 envelope of active dry yeast 1/8 c. warm water 1/2 c. milk 1/2 stick of butter, divided 1/2 c. sugar 1/2 tsp. salt 3 1/2 to 4 c. flour, divided 7 raw eggs, or 3 raw and 4 hard-boiled eggs 1 tbsp. water A small saucepan 2 large mixing bowls Electric mixer or whisk A pastry brush A large baking sheet Food coloring 3 tbsp. blanched almonds, slivered Step 1: Prepare yeast Dissolve the yeast in the warm water. Step 2: Combine milk, butter, sugar Heat the milk on low until almost simmering, and then stir in one-quarter stick of butter until melted. Turn off the heat. Pour the sugar and salt into a mixing bowl, and then pour in the milk and melted butter mixture, stirring until the sugar is dissolved. Step 3: Add flour, yeast, eggs When the mixture has cooled to lukewarm, stir in a cup of flour and beat with the electric mixer or by hand until smooth. Easy Esbat/Sabbat Mooncakes For metric conversion, go to the following website...you have to put the measurement in, in decimals www.worldwidemetric.com ¼ Cup Shortening ¼ Cup Butter (softened) ¾ Cup Granulated Sugar 1/3 Cup Milk (Soy, Cow, Goat or Almond. *w/ Rice Milk, it doesnt come out correctly) ½ teaspoon Pure Almond Extract 1 Tablespoon Pure Vanilla Extract 2 Cups Flour 1 ½ teaspoons Baking Powder Cream first three ingredients. Add remaining ingredients and mix with spoon or hand mixer. Roll dough out to 1/8 ¼ of an inch thickness on a floured surface and cut into shapes. Esbat Shape Ideas - Use Moon or Star shaped cookie cutters, or a glass for round shapes. Food Coloring can be used for New and Dark Moon Esbats. Sabbat Shape Ideas - Candlemas Flame or Candle Ostara Egg or Rabbit Beltane Flowers Summer Solstice Sun Lammas Fruits, Pumpkins, Leaves, Veggies Mabon- Apple or Pumpkin Samhain Cauldron, Witches hat, Apples Yule Tree or Sun Bake at 350 degrees (F) for 8 to 9 min on an ungreased cookie sheet (baking times may vary; bake until golden brown on bottom and edges are set).
