Recipe: Lemon Cream Daisies Chef: Gale Gand Serves: About 40 "It's amazing how often, when I'm planning a dinner menu, the perfect dessert is clearly a lemon tart. Rich but always refreshing, a good lemon tart is simply elegant, cheery, and harmonizes with so many other flavors. Although these are miniature tarts, they're actually easier than usual: you make them with store-bought puff pastry. I love the contrast of flaky-crisp pastry layers and deep, plush custard. If you don't have a flower-shaped or fluted cookie cutter, feel free to use plain rounds. Just make sure to gently cut and lift out the center to make room for the lemon cream."
