Turkey Meatballs and Sauce

During the Nor'Easter Snow Storm Yesterday I made Homemade Turkey Meatballs and Sauce: Recipe: Turkey Meatballs and Sauce: 1# 93% Fat Free Ground Turkey 1 Tbl. Extra Virgin Olive Oil Breadcrumbs ¼ Cup Parmesan Cheese ½ Cup Finally Chopped/Minced Onion ½ Cup Finally Grated Carrot 2 Tbl Parsley To taste: Chopped Garlic Thyme Salt and Pepper 1 Egg Mix all the above either in a Kitchen Aid mixer or by hand. I do not measure the bread crumbs,, after it has been mixed check to see if you need more breadcrumbs. I use the Pampered Chef cookie scoop to make small meatballs or make any size you wish. Spray a 9X13 pan with cooking Spray. Bake in a 375* 20-25 Minutes Meanwhile as the Meatballs are cooking: Make the Sauce: In a large pan: Heat 1 Tbl. Extra Virgin Olive Oil Add 1 small chopped Onion Slightly brown Add Garlic to taste,,, cook 1-2 minutes Add: ½ cup Red Wine (Optional but adds such a nice flavor) Cook off the Wine Add 3 Tbl. Tomatoe Paste mix in Cook for 1 minute Add: 1 - 28 oz Can of Crushed Tomatoes Add to taste: Oregano Italian Seasoning Basil Parsley Salt and Pepper Simmer on low for 30 minutes If the sauce is to thick add some Water. If you'd like add some chopped Tomatoes. Check the seasonings after 30 minutes and re-adjust to your taste. Simmer for 15 more minutes Add the Meatballs Simmer on low..covered for 1 hour Check the Meatballs after an hour,.. do not over cook them because they can dry out. I have cooked them in the Sauce as long as 2 hours on a very very ...
